All our food is slow cooked to order by Culinary Institute of America at Greystone (CIA) "trained" Chef Jon Jednak and served in a 1950's Pullman dining car, the "Talladega". Sous Chef Armand Saiid is a biodynamic farmer and owner of Infinity Farm in Ribera New Mexico. Armand is our FarmER to table!
We support our local New Mexico farmers by shopping each week at the Santa Fe and Eldorado Farmers' Markets. Chef Jon personally selects fresh, local organic seasonal farm products including meats (beef, buffalo, chicken, pork) and local eggs.
